Succulent Spare Ribs

4 cups water
1/2 cup white vinegar
2 pounds of ribs cut in peaces of 2 inches
6 table spoons of corn starch
2 table spoons of Soya sauce
2 table spoons of Pied-Mont molasses
Salt and pepper
oil

  • Heat water and vinegar until it comes to a boil.
  • Add the ribs and let cook for approx. 20 minutes or until well cooked.
  • Remove from heat, drain water and let cool down.
  • This step can also be done the day before.
  • Mix the corn starch, Soya sauce and the Pied-Mont molasses in a large bowl.
  • Once the three ingredients well mixed, dip in the ribs into the mixture.
  • Refrigerate the rest of the sauce mixture. In a deep and large pan, add oil and fry the ribs.
  • Add spices of your choice.
  • Once the ribs are cooked and put aside, start the preparation for the Succulent sauce.

Spare Ribs succulent sauce

2 table spoons of sugar
1/3 cup of water
1/3 cup of vinegar
Pineapple juice
Add the rest of sauce mixture put aside earlier (corn starch, Soya sauce and the Pied-Mont molasses
1 green pepper cut in strips diagonally
1 can of pineapple cubes

Mix the sugar, water, vinegar, pineapple juice and the rest of sauce mixture put aside earlier (corn starch, Soya sauce and the Pied-Mont molasses) in a deep and large pan. While stirring, bring to a boil. Add cooked ribs to the succulently hot sticky sauce and let cook for a short while. After, add the strips of green pepper and the can of pineapple cubes, keep cooking another few minutes.

Bar-B-Q sauce

3⁄4 cups of cider vinegar 3 table spoons of dry mustard
3⁄4 cups of hot water
1/2 cup of ketchup
1 table spoon salt
1/4 cup of chilli sauce
1 t. spoon of ground pepper
3 table spoons of Worcestershire sauce
1 t. spoon of Hungarian paprika
1 dove of garlic mashed
2 table spoons of dark brown sugar
2 table spoons of finely cut onion
1 table spoon of Pied-Mont molasses
1 table spoon of butter

Mix together in a bowl: vinegar and water. Add salt, pepper, paprika, sugar, Pied-Mont molasses and the dry mustard. Put aside. Then in a sauce pan add ketchup, the sauces, garlic, onion and the butter. Bring to a boil and add preparations in bowl put aside. Let cook about 10 minutes, than put aside to cool down.
Spread on to Bar-B-Q grill, the spare ribs and smother them with home made Bar-B-Q sauce
