Pied-Mont Coconut Cookies

1/4 cup margarine
1/3 cup granulated sugar
2 eggs
3 cups unsweetened dessicated (shredded) coconut
2 1/2 cups All-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 stp salt
1 tsp Vanilla extract
1/3 cup milk
Pied-Mont Coconut Spread

  • Combine margarine, sugar and eggs, mix well.
  • Blend with Pied-Mont Coconut Spread and coconut.
  • Mix flour, baking powder, baking soda and salt.
  • Blend with the first mixture alternating with vanilla extract mixed with milk.
  • With 2 spoons, drop dough on a baking tray.
  • Bake in 375 F (190 C) oven, 10 to 12 minutes.
