Louis’s cake

1/2 cup of butter
1 cup of sugar
2 eggs
1 1/2 cup of flour
2 1/2 tsp of baking powder
1 pinch of salt
3/4 cup of milk
Vanilla extract
Pied-Mont blueberry “coulis”

  • Cream the butter. Gradually add sugar, eggs and mix well a few minutes.
  • Sift flour, add baking powder and salt.
  • Mix the first preparation alternating flour and milk. Flavoring.
  • Reserve half of this mixture.
  • Pour the remaining into a cake pan (greased and starched) of about 7 inches.
  • Pour the Pied-Mont blueberry “coulis”.
  • Pour gently the remaining dough on the “coulis”.
  • Bake at 375 F.
